Cookie post!

I already did one gingerbread cookie post, but this will finish off my cookie post for Christmas baking! It will be a short one since I made Christmas cupcakes this year instead of cookies, plus some other desserts for parties.

So here was my other Christmas cookie!

I got it from a Martha Stewart Christmas cookie magazine I picked up in the super market! Martha knows her stuff. Dave actually picked this one out. I don't have a photo, but the cookie inside is a chocolate mint cookie, like a girlscout thin mint! Delicious!

Something odd happened with the white chocolate though, it melted, then it got really dry and lumpy and I couldn't bring it back to liquid and melty again over the double boiler. I've been meaning to google it and will post if I find an answer! I used Ghirardelli white chocolate chips, plus some bars I had bought for another purpose, but needed after my first bag of chips failed.

So my white chocolate coating came out a little lumpy and not as smooth as Martha's but they tasted good! Only other issue was the crushed candy cane sticks to your teeth when you bite into them, but I didn't hear anyone complaining, haha.

Here's the cookie plate ready for a party!

Next will be my epic dessert post!

oatmeal scotchie win

This will be a short post since I'm sleepy and a little under the weather.

I'd been meaning for sometime to make oatmeal scotchie cookies from Toll House. Mostly to use up my butterscotch chips from my seven layer bars. Pretty much, when I put them in the oven to bake, they just melted. It was so sad.

I used whole wheat pastry flour since I was actually almost out of all purpose flour, but I though pastry flour was supposed to have more stick-togetherness? Whatever, either way, they melted and failed and all I did was take a really long time and a lot of effort to make my apartment smell really good.

I hate when things fail, plus I really wanted to make oatmeal cookies for Dave, but I was mad at Toll House at this point. So I found a new recipe in a book of my grandmothers and decided to go that route. It called for quick-cooking rolled oats, any my first recipe called for old-fashioned oats...hmmm... Clearly, the internet is useless because I spent about 30 min trying to find out the difference, if I could substitute, etc., and I found no satisfactory answer. So back to the store I went...

Finally oatmeal scotchie success!

Chewy oatmeal scotchie!

Father's Day 7 Layer Bars and what I did with leftovers

Around Christmas time my dad had brought home some 7 layer bars a woman at his office had made for everyone. He was a big fan so he asked for the recipe to give to me and I didn't get around to making them until this past fathers day, hehe.

So here they are! Wasn't especially sure how they were supposed to look, and there were no layers to be had in the end, but they were still tasty!

Seven layer bar win! No sliced pictures, sorry!

I have this issue where I'll buy a particular type of chips for something then I keep them forever because I move on to something else. So after the bars I had chocolate chips, butter scotch chips, walnuts and coconut to use up.

So I made these cute toll house island cookies. Haha, mine do not look as perfect as the picture on their recipe page but mine are much more fun! They helped use up the coconut and walnuts. I used the rest of my dark chocolate chips instead of milk plus some white chocolate chips sitting around. I have plans for the butterscotch chips though, don't worry!
