Giant Oreo Cookie Cake

Awhile ago my mom saw and had to have this giant cookie cake pan.

This past week was her birthday! So I made her a ginormous Oreo cookie cake!

This cake is devil's food with a whole bag of crushed up Oreo cookies mixed in. The filling is a homemade cookie filling from Martha Stewart that tasted pretty damn close to the real Oreo filling. Of course if you don't have the cookie cake pans, I'm sure this cake would be just as awesome with normal round cake pans, and sprinkled in a ton of Oreo cookie crumbs!

For the cake

1 1/2 cups (3 sticks) unsalted butter, plus more for pan
1 1/4 cups unsweetened cocoa powder
1 1/4 cups hot water
3 cups all-purpose flour
1 1/4 teaspoons coarse salt
1 teaspoon baking powder
1 teaspoon baking soda
2 1/4 cups granulated sugar
4 large eggs
1 tablespoon plus 1 teaspoon pure vanilla extract
1 cup sour cream
1 package crushed Oreo cookies
  1. Preheat oven to 350 degrees.
  2. Coat two round cake pans with cooking spray.
  3. Whisk together cocoa powder and hot water until smooth.
  4. Sift together flour, salt, baking powder, and baking soda; set aside.
  5. Melt butter and sugar in a saucepan over medium-low heat.
  6. Remove from heat, and transfer to a mixer. Beat on medium-low speed until cooled, 4 to 5 minutes.
  7. Add eggs, one at a time, beating after each addition.
  8. Beat in vanilla and cocoa-powder mixture.
  9. Reduce speed to low. Add flour mixture in two batches, alternating with sour cream and beginning and ending with flour. Beat until just combined.
  10. Fold in crushed up Oreo cookies.
  11. Divide batter between pans, and bake until a cake tester inserted into centers comes out clean, 45 to 50 minutes.
  12. Transfer pans to a wire rack to cool for 15 minutes before turning out of pans
For the filling

1 cup (2 sticks) unsalted butter, room temperature
1 cup solid vegetable shortening
7 cups confectioners' sugar
2 tablespoon pure vanilla extract
  1. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and shortening until well combined.
  2. With mixer on low speed, gradually add the confectioners' sugar, and continue beating until light and fluffy, about 2 minutes.
  3. Add the vanilla, and beat to combine.
  4. Set aside at room temperature until ready to use.

Chocolate Chip Eats Oreo

I made these a week or two ago as dessert for Sunday night dinner with my family. But I thought they would make a lovely Spring Equinox post since I used special springtime Oreos...

Okay, I didn't really seek out special springtime Oreos. They were on the end of the aisle. They're the springtime edition because they have yellow cream in the middle, and apparently 5 different special springtime designs on the cookies. Not that you can tell for these, because they are consumed by a chocolate chip cookie! :oD

Recipe can be found here. The bake time was more like 15 - 17 min for me, but my cookies were ginormous, hehe... Here is an unflattering picture of me showing you how one of the cookies is the size of my face!

They were easily a one person dessert in themselves. Plus a scoop of ice cream on top. If you make them, I suggest you leave plenty of room on the cookie sheet for them to spread out!

Oreo Cheesecake Cupcakes

For Christmas I received 500 Cupcakes. This is one down, 499 to go!

I made these for dessert for one of our girls nights. Plus a birthday dinner the next night and brought some to share with my family for Sunday dinner. :oD

The recipe in 500 Cupcakes is for any standard fruit topped cheesecake with graham cracker crust, but I modified. That's a whole Oreo cookie popped in the bottom of the wrapper for the crust. :oD I wish I could say it was my idea, but I stole it from a friend. It is a good idea, cuts down on baking time when you don't have to mix a crust and press it in the bottom of 24 little cupcakes!

Centers always sink a bit on cheesecakes I think, is that just part of baking a cheesecake? Anyway, I topped these with more crumbled Oreo cookie crumbs and the cheesecake was delicious.

They were a success all around! I'll definitely make them again.

cookies and cream cupcake fail

ugh! i'm so mad at these cupcakes! what a waste!


I wanted to be somewhat clever and experiment and make this strawberry milano cupcake recipe. I booked marked it because I LOVE double chocolate milanos. Love them. And I love cupcakes so naturally this was a recipe for me. Only I'd eaten all the milanos, but I could use oreos. So then I wanted to top them with vanilla vodka frosting! That I would amend from this recipe for strawberry vodka frosting. And I would call them cookies and cream cocktail cupcakes! :oD :oD

Omg...so excited! For some reason I decided to half the recipe. It was just for fun anyhow. So bake away and get everything cleaned up and take them out of the oven and they look purty good! I let them get a little too dark around the edges but I broke into one and the texture looks good.

So I ate it. And at first it was okay, then I got this awful taste...like something burnt, or bitter, but it was awful or whatever it was. I had two more before i realized my cupcakes were truly bad the threw them all away.

Was it the baking powder? It didn't seem like too much baking powder. Maybe it's just not meant to be halved. Whatever happened they suck and I don't want to make them again. BAD milano cupcakes!

Anyway, before I realized how much they sucked I took pics for the flickr page. But these cupcakes would never realize their dream of being topped with vanilla vodka frosting. sad.
