Hello, my name is Kim. I live in northwest NJ with my husband-to-be, a retired racing greyhound named Odie, and adopted bunny rabbit named Lillie.
I want to quit my job and bake cupcakes (and cookies, and cakes, and marshmallows, oh my!) for a living.
I like my blog, because I try to offer an honest review of the recipe I followed, then adjust it to make it more understandable and manageable. Like why the hell do I need to grease a pan, line it with parchment, then grease the parchment? What a pain in the ass! But if that really is essential to the recipe, or will save you a headache later on, I'll tell you, and make sure to explain why. (By the way, I haven't found greasing the damn parchment paper to make one bit of difference, skip that step!)
Also, I am humbly a hobbyist baker, if a recipe calls for cake flour, or Fleur de Sel or something crazy like that, chances are I have already found you an easy substitute that does not require you to run out in a futile search at Shoprite for Mexican cocoa (1/2 cup plus 1 tablespoon unsweetened cocoa powder, and add 3/4 teaspoon ground cinnamon, now that you know, go make some Mexican cocoa brownies).
