Fall baking round up

work has me stressed out, so haven't been keeping up with my little blogger or much baking/crafting for that matter. Flickr has been updated thought!

Pumpkin muffins!

My first apple pie all by my big self. With apples we picked from the orchard.


Sexy apple pie slice with homemade ginger ice cream, without and ice cream maker. Still a success! Doesn't go as well with the apple pie as I thought but it's tasty. :oD


Homemade apple butter, would of been great except don't use black pepper in your all spice substitute, worst idea ever.


Vanilla and apple butter swiss meringue buttercream macaron. That's cinnamon on top, did it taste like apple cinnamon? No...just sugar. Still looking for a decent macaron recipe, baking instructions are all wrong for the ones I tried so far!


Ghost shaped Count Chocula cereal treats for a halloween party. They were awesome.

wanna-be organic french toast muffins

I am rather behind on baking posts. I've been moving and what not, but that's the best excuse I have. Anyway, I made these one night while still at my apartment. They are wanna-be organic because I substituted a bunch of organic ingredients...sort of...


I amended from this recipe. I think I deem it a success, they seemed a little dry the next day, but would be good with some jam or butter. I ate them for breakfast all week and they definitely have a french toast flavor with the cinnamon.

I used whole wheat pastry flour (substitute volume for volume) and used organic vanilla yogurt thinned with approx 1 tablespoon chocolate soy milk instead of buttermilk. And, I used organic agave maple syrup instead of classic maple syrup. I poked holes in them like the instructions say but my syrup just sort of went all over, maybe if it was room temperature, mine was cold.

Baked about 6 minutes for minis. It made almost 42! They looked adorable and tasted lovely right after I poured the syrup over them and dusted them with powdered sugar, but in like 10 minutes my powdered sugar disappeared somewhere into the muffin. If you're going to serve these for a brunch or something I suggest sprinkling with powdered sugar right before you set out!

Brunch!

last saturday i went to a birthday brunch in someone's home. since it was a brunch, i couldn't exactly bring a bottle of wine and be done with it, so i bake these mini pancake muffins!


the recipe specifies it makes 24 mini muffins but i only got about 18 out of the first batch! i'm sure i filled the muffin cups too much, but i didn't want them to look anemic!


that was not nearly enough mini muffins, plus i bought a whole carton of buttermilk and what else was i going to do with it? so i baked a second batch. I split the batter into 3 bowls and made some plain, some blueberry, and some chocolate chip. A little something for everyone. :op


i had to leave them in a little longer than 8-9 minutes, and even a bit longer for the blueberry ones. Right out of the oven, they taste orgasmic! The next day when they were room temperature they didn't have quite the same magic, but were still tasty. It was a shame the rest of the guests couldn't taste them at their best.

i still have buttermilk left over, (even though i used it for breakfast-for-dinner pancakes during the week) so I'll probably make these again to this weekend. turning the oven on will help warm up my apartment in this snowy weather.
